Use this namkeen recipe, which gives you the info on how to make namkeen, and prepare this snack to eat as is or  with a hot cup of coffee or tea. The groundnuts in the namkeen gives it a nutritious element. The curry leaves adds the flavor to it and the chilies makes it hot and spicy. If you desire to prepare this food fresh, and to your taste preferences, at home, refer to this namkeen recipe and get to know how to make namkeen.

If you wish, you can mix namkeen with fresh puffed rice / murmure / kadale puri / maramaralu, as this combination can be more delicious. If the puffed rice is not crispy, dry fry it for a few minutes and then mix it with namkeen.

Namkeen is a snack that you would overeat, particularly if it is fresh. Because it is a deep-fried food, do watch on how much you consume it from the health view.

Besan / Chana flour / chickpea flour / kadale hittu 1 cup
2. Oil 1 tablespoon
3. Turmeric / haldi 1/4 teaspoon
4. Water 1/4 cup
5. Hing / asafoetida 2 pinches
6. Red chili powder 1 teaspoon
7. Jeera / Cumin seeds 1/2 teaspoon
8. Salt to taste
9. Groundnut 1 tablespoon
10. Curry leaves 2 sprigs
9. Oil for deep frying
10. Murukku / chakli press or machine





How to make Namkeen?


1. Mix hing / asafoetida with 1 teaspoon of water.

Crush jeera into coarse powder.

Keep aside.

2. Mix besan, turmeric, red chili powder, jeera  and salt. namkeen recipe s2
3. Heat 1 tablespoon of oil. Add it to the above mixture.

Mix.

4. Add hing water. Mix.
5. Make a dough:

Add 2 teaspoons of water to the flour mixture. Mix.

Add 2 more teaspoons of water again. Mix.

Repeat the above process till you make use of the entire 1/4-cup of water.

NOTE:

- Be aware that as you make the dough you will find it to be little sticky.

- The dough should be soft. You should feel the softness when you press it.

- If you find the dough to be hard, add few teaspoons of water and mix.

6. Heat oil in a kadai. namkeen recipe s6
7. Fill the cup of the murukku press with the besan dough, leaving some space at the top.

Note: Use a 5-hole or big-holes murukku plate.

8. Fix the top portion of the murukku press to the cup. namkeen recipe s8
9. Keep the stove in sim mode.

Hold the murukku machine above the hot oil.

Press or rotate the handle of the murukku machine, in a circular motion, directly on the oil.

Once the dough strands cover the entire surface of the oil, stop pressing / rotating.

Change the flame to medium.

10. Fry till the oil stops bubbling.

Change the flame to sim mode.

Fry for 1-2 minutes.

After you remove the namkeen from the oil, place the namkeen on a paper towel so any excess oil is absorbed by it.

11. Add groundnuts to the hot oil and fry.

After some time, the groundnuts' skin start to break.

Fry for one minute.

Remove the groundnuts from the oil.

12. Fry the curry leaves and a few broken red chili pieces, till the curry leaves become crisp.

Remove the curry leaves and chilies from the oil.

13. Break the namkeen into small pieces.

Mix the pieces with the groundnuts and curry leaves.

Namkeen is ready.
