How to make Sev?

Learn how to make sev to use it for chaats like sev puri, masala puri and bhel puri. Sev is also used in some types of namkeen. Of course you can eat sev as is, as a snack, especially with coffee or tea. A good news on how to make sev is that it needs only a few items and that it is easy to make.

The main ingredient you need to make sev is besan or chana flour. 

You need to buy or borrow murukku / chakli machine or press to make this snack. Steel and aluminum murukku machines are usually available in stores that sell steel utensils.

Use a plate, which is given with murukku machine, with small holes to make sev.

Store the sev in an air-tight container to keep this food fresh and crisp.

Besan / Chana flour 1 cup
2. Oil 1 tablespoon
3. Turmeric 1/4 teaspoon
4. Water 1/4 cup
5. Hing / asafoetida
6. Salt to taste
7. Oil for deep frying
8. Murukku / chakli press or machine





Steps on How to make Sev


1. Mix hing / asafoetida with 1 teaspoon of water.

Keep aside.

2. Mix besan, turmeric and salt. how to make sev s2
3. Heat 1 tablespoon of oil. Add it to the above mixture.

4. Add hing water. Mix.

5. Make a dough adding water little by little, while mixing.

NOTE: The dough should not be hard. When you press the dough it should be soft.

If you find the dough to be hard, add few teaspoons of water and mix.

7. Fill the cup of the murukku press with besan dough, leaving little space at the top. how to make sev s7
8. Fix the top portion of the murukku press to the cup.
9. Keep the stove in sim mode.

Hold the murukku machine above the hot oil.

Press or rotate the handle of the murukku machine, in a circular motion, directly on the oil.

Once the raw sev covers the entire surface of the oil, stop pressing / rotating.

Change the flame to medium.

10. Fry both sides of sev till the oil stops bubbling.

Change the flame to sim mode.

Fry for 1-2 minutes.

After you remove the sev from the oil, place the sev on a paper napkin so any excess oil is absorbed by it.

Sev is ready.
