Quantity: About 5-6 slices

Ingredients:

1. Wheat bread, 5-6 slices
2. Oil 2-3 teaspoons
3. Mustard 1/4 teaspoon
4. Chana dal 1/2 teaspoon
5. Jeera 1/4 teaspoon
6. Curry leaves 2 sprigs
7. Green chilies, chopped, 2 or to taste
8. Ginger, chopped, 1/2 teaspoon
9. Onion 1
10. Carrot 2
11. Tomato 1
12. Turmeric, few pinches
13. Peas, frozen or cooked, 1/2 cup
14. Coriander leaves, few sprigs
15. Salt to taste
16. Ghee, about 2 teaspoons

How to make Bread Toast Indian Style?

1. Cut onion and tomato into thin, long pieces.

Cut the pieces into half.
2. Wash the carrots thoroughly.

Scrape the outer skin.

Grate the carrots.

TIP
Use a grater with medium-size holes to get gratings that are neither too small nor big.
3. Heat oil in a utensil.

Add mustard when the oil becomes hot.
4. Add chana dal when the mustard starts to splutter.

Fry for a few seconds.

Add jeera.

Fry till the dal turns golden brown.
5. Add green chilies.

Fry for a few seconds.

Add curry leaves.

Add ginger.

Fry for a few seconds.
6. Add onion.

Fry till the onion become soft.

NOTE
Do not fry till the onion turns golden-brown, because the taste of the sandwich will not be good.
7. Add peas.

Fry for a few seconds.
8. Add carrot gratings.

Fry for a few minutes.

Add turmeric. Mix. Sprinkle little water if the gratings are dry.

Cover and cook till the gratings are just soft.

TIP
Do not over cook the carrot gratings, because the quantity of the palya or curry will be reduced.

Remove the lid and mix.

Add salt and fry for a few seconds.
9. Add tomato pieces and mix.

Cook till the pieces become hot.

TIP
Cook the tomato pieces only till they become hot. If you overcook this vegetable, the palya or curry will become soggy.
10. Add coconut gratings.

Fry for a few seconds.

Add chopped coriander leaves. Mix.

Switch off the stove.

Keep aside.
11. Heat a tava.

Coat the tava with ghee.

Place a slice of bread.

Press with a spatula.

Cook for a few seconds.

Pour and spread a few drops of ghee.

Flip.

Cook till both sides are golden-brown.
13. Place a few teaspoons of palya / curry on the bread.

Spread and press lightly.

Switch off the stove.

1. Set the flame between low and medium and prepare the bread toast, so it is not too crispy or soft.
