1. Rice, cooked, 2 cups

Tamarind paste or tamarind concentrate 1-2 tablespoons
3. Oil 1-and-1/2 tablespoons
4. Mustard 1/2 teaspoon
5. Groundnut 1 tablespoon
6. Chana dal 3/4 teaspoon
7. Urad dal 1/2 teaspoon
8. Red chili, broken, 1
9. Curry leaves 1 sprig
10. Onion, chopped, 1/3 cup
11. Garlic cloves 5-6 (optional)

12. Turmeric powder few pinches
13. Red chili powder 1/2 teaspoon
14. Coriander powder 1/2 teaspoon
15. Jeera powder 1/4 teaspoon
16. Jaggery 1-and-1/2 teaspoon or to taste
17. Salt to taste
18. Coconut or copra gratings 1 tablespoon
19. Coriander leaves, few sprigs

How to make Tamarind Rice?

Squeeze the juice from the tamarind pulp. Transfer the juice to a bowl. Add little water to the pulp and squeeze the pulp again and transfer the juice. Keep aside.

Mix tamarind paste or concentrate with 2-3 tablespoons of water.

4. Add groundnut, and chana dal. Fry for a few seconds.

Add urad dal. Fry till dal turns golden brown.

Fry for a few secs.

Add tamarind juice, jaggery and salt.

Cook till the oil starts to separate.

Switch off the stove.

Tamarind rice seasoning or tempering is ready.
Set aside a small quantity of seasoning. If after mixing it with rice you find it to be less spicy, you can add all or some of the extra seasoning you set aside.

Add the cooked rice to the above seasoning. Mix thoroughly.

Taste and add salt if necessary.
