Ottu shavige or akki shavige (known as idiyappam in Malayalam) is home-made rice noodles. These are super-delicious! This food is so tasty, it would not be a surprise if you over eat it without your awareness!

As this food is steam-cooked it is healthier too. Ottu shavige is said to be good for the heart.

This dish can be eaten as a breakfast, lunch or dinner.

To prepare this cuisine, you will need the ottu shavige machine. You could also use the chakkuli machine. A problem you may face with it is the difficulty of pressing / rotating the machine. So, I would recommend using the ottu shavige machine.

Copra-poppy seed (gasagase in Kannada) kheer or coconut chutney makes good companions as side dishes for ottu shavige. Most times I use kheer, as I have found it to be an excellent side dish for this food.

Here is the ragi ambli recipe.


1. Rice 1 cup
2. Water 1-and-1/2 cup
3. Salt 1 pinch
4. Oil 1 teaspoon

How to make Ottu Shavige / Akki Shavige?

1. Wash the rice and soak it with 1-and- 1/2 cup water for 2-3 hours.

2. Grind the soaked rice into a fine paste, using the same water used in step 1.
3. Pour the rice paste into a thick bottomed pan or non-stick pan.

4. Add salt and oil.
5. Cook over a medium flame, stirring continuously.
6. Turn the flame to low, when the paste begins to thicken.
7. Continue to stir the batter till it is fully thick, which means you cannot stir any more.

8. Cover with a plate and cook for a few more minutes.
9. Turn off the flame.

Set aside the batter for a few minutes.
10. Take a plate and apply a coat of oil on the plate's surface.
11. Take about one quarter of the batter and place it on the greased plate.

12. Knead the batter into a dough when it is still hot, wetting your hand or using a wooden presser.

Make a ball from the dough.

Mould the ball into the shape of the cup of the ottu shavige machine. Ensure the ball fits into the cup.

13. Make a hole in the center of the ball using your wet finger or using a knife, so the ball cooks fast and thoroughly.

14. Arrange the balls in a circular pattern in an idli stand or a bowl, which fits inside an idli cooker.

15. Add about two cups of water to an idli cooker and heat it till the water boils.

Put the idli stand inside the idli cooker and steam for 18-20 minutes.

16. Check if the balls are cooked:


Wet a finger and gently touch a ball (be careful, because balls will be hot). If the ball does not stick to your finger, the ball is cooked properly


Wet your finger and tap a ball. It makes a hollow sound if the ball is cooked properly. Otherwise, cook for few more minutes and test again.
17. Let it stand 2-3 minutes.
18. Remove the idli stand from the cooker.

Transfer the balls to a bowl and cover it.

Keep aside for 2-3 minutes.
19. Place one ball in the cup of the ottu shavige machine, while the ball is still hot.

20. Place a plate below the cup to collect the noodles.


Rotate or press (according to your machine) the handle of the machine.
21. Rotate the plate as you rotate / press the handle, so the noodles will spread on the entire plate.

22. Transfer the noodles into a bowl and cover it.
23. Repeat the above relevant steps for the second and other balls.
24. Ottu shavige is ready.

Serve the noodles with chutney and or copra-poppy seed kheer.


TIPS How to make Ottu Shavige or Akki Shavige?
1. Make the noodles while the balls are hot, otherwise it would be difficult to rotate the machine handle.
2. Ensure there is adequate water in the idli cooker.
3. Use a pressure cooker, if you do not have the idli cooker, without putting the whistle (weight).
