Servings: 2-3

Ingredients:

1. Cooked rice about 2 cups
2. Oil 1-and-1/2 tablespoons
3. Mustard 1/4 teaspoon
4. Groundnuts 1/2 tablespoon
5. Chana dal 1 teaspoon
6. Curry leaves 1 sprig
7. Red chili 1
8. Coriander leaves 3-4 sprigs finely chopped
9. Salt to taste

Ingredients for Powder:

1. Curry leaves / karipatta / karibevu / karivepaku / kariveppilai, packed 1/2 cup
2. Oil 1 teaspoon
3. Groundnut 1/2 tablespoon
4. Urad whole / Urad dal 2 teaspoons
5. Chana dal 2 teaspoons
6. Coriander seeds 2 teaspoons
7. Dried red chilies 5-6 or to taste
8. Tamarind small piece
9. Cinnamon stick 1/2"
10. Cloves 2-3
11. Dry coconut gratings 1 tablespoon
12. Salt to taste

How to make Curry Leaf Rice Powder?


1. Wash the curry leaves and spread them on a cotton cloth or paper towel to remove the extra water.
2. Heat oil.

3. Add chana dal, groundnuts and urad whole.

Fry till the dal color changes.

NOTE
If you will use urad dal, add the same in Step 4.
4. Add all the ingredients, except the coconut gratings.

Fry till the dal changes to golden brown color.

5. Add coconut gratings.

Mix.

Switch-off the stove. Keep aside to cool.
6. Add all the ingredients to a mixer jar.

Grind to a coarse powder.

How to make Curry Leaf Rice?


1. Heat oil till it becomes hot.

2. Add mustard seeds.

3. Add the groundnut and chana dal when the mustard starts to splutter.

Fry till the dal turns to light golden brown.

4. Add the cashews, curry leaves and broken chili.

Fry till the cashews turn to golden brown.

Switch-off the stove.
5. Keep about 1 tablespoon of powder aside

Add rice, little salt and the remaining powder.

Mix.

Add coriander leaves and mix.

Keep aside the mixture for 10-15 minutes, so the rice absorbs the spices and become tastier.

Taste and adjust the salt and or powder.
6. Curry leaf rice is ready.

TIPS Curry Leaf Rice
1. Use tamarind paste or lemon juice, as a substitute for tamarind, while mixing the rice.
2. If you do not have fresh curry leaves, use dry curry leaves. However, such leaves will have less flavor.
