6. Chili powder 1 teaspoon
7. Sugar 1/4 cup
8. Turmeric 1/8 teaspoon
9. Salt to taste

1. Fry mustard and methi, each separately, till they crack. Keep aside to cool.

Pound or roll these together into a powder, using a rolling pin or stone.

2. Wash the mango. Dry it with a cloth.

Use only fresh and firm Totapuri mango.
3. Cut the mango into pieces or cubes.

4. Heat oil in a steel kadai / wok.

5. Add saunf. Fry till it turns to golden brown.

6. Add mango pieces. Add 1/2 a teaspoon of salt. Fry till the mango pieces are half-cooked.

7. Add sugar. Mix. The mixture becomes watery. Cook till the syrup thickens.

8. Add chili powder, turmeric, salt, and mustard-methi powder. Mix. Switch off the stove.
