Ingredients:

1. Dried red chilies 20-25 or to taste
2. Channa dal 1/4 cup
3. Urad dal 1/4 cup
4. Coriander seeds 1/4 cup
5. Cumin seeds 1/8 cup
6. Sesame seeds 1/4 cup
7. Black pepper 1 tablespoon
8. Methi 1/4 teaspoon
9. Mustard 1 teaspoon
10. Tamarind 1/2 cup
11. Dry coconut pieces 1/4 cup
12. Turmeric root 1 piece
13. Jaggery pieces 1/4 cup
14. Hing / Asafoetida 1/4 teaspoon
15. Salt to taste

Seasoning:

1. Oil 1/4 cup
2. Mustard 2 teaspoons
3. Ground nut 1/4 cup
4. Channa dal 1 tablespoon
5. Urad dal 1 tablespoon
6. Curry leaves 4-5 sprigs
7. Dried red chilies 2-3

How to make Puliyogare Instant Mix?


1. Pick stones / sand / tamarind seeds / tamarind outer shell / fiber that may be present in the tamarind.

Break tamarind into small pieces.

Dry the tamarind in the sun, If possible, till it becomes dry or fry till the tamarind becomes dry.

2. Dry fry all other items, individually, except dry coconut pieces, hing turmeric, jaggery and salt, till they turn to golden brown or till crack sound is heard.

NOTE
If you do not want the puliyogare to be spicy use only byadagi chilies and reduce the pepper quantity.

Keep aside to cool.
3. Dry fry the coconut pieces till these are warm.

4. Pound the turmeric root into small pieces.

5. Dry grind the coconut pieces into a powder. Keep aside.
6. Dry grind the tamarind pieces into a powder.

7. Add all items, except coconut powder, to the tamarind powder.

Dry grind the items to make a powder, which should have a fine-rava like texture.

Keep aside to cool.
8. Heat oil in a kadai.

9. Add mustard seeds. When these begin to crack, add groundnut and channa dal.

Mix.
10. Add urad dal after one minute.

Fry till dals turn golden-brown.
11. Add curry leaves and dry chillies.

Mix.

Switch off the stove.

Fry till the curry leaves become crispy.

Keep aside to cool.
12. Mix all the powders with the seasoning after the seasoning has cooled completely.

TIPS Puliyogare Instant Mix
1. Always use good quality oil, so the mix will not be spoiled.
2. If you do not want to add the seasoning again, before or after mixing the rice with the instant puliyogare mix, add 1/2 cup of oil instead of 1/4 cup.
3. This puliyogare instant mix can be stored for about 3 months.

1. Puliyogare instant mix. Quantity: As needed.
2. Rice cooked from 1 cup

Seasoning:

1. Oil 2-3 teaspoons
2. Mustard 1/4 teaspoon
3. Curry leaves 1 sprig



1. Spread the cooked rice on a plate to cool.
