Break a fresh coconut.
Remove the coconut kernel from its shell:
- Tap each of the two broken coconut pieces, all around. Tapping helps loosen the kernel.
- Carefully and gently push an object like a knife or screwdriver between the shell and kernel, all around and further loosen the kernel.
- Remove the kernel. If it is difficult to take it out, break the shell gently.
Remove the brown outer skin, using a peeler.
Cut the coconut into small pieces.
Dry grind the pieces to get the gratings.

The color of the dessicated coconut should be white. Thus, it is important to set the flame to low and use a thick-bottom utensil.
Fry on a low flame till the gratings become dry.
If the coconut begins to burn, during frying, switch off the stove and continue to fry.
After the coconut slightly cools, switch on the stove, set the flame to low and continue to fry.
