Ridge gourd / towel gourd / heerekayi / peerakangai / turai / beerakaya, chopped, 2 cups
2. Sprouted moong, 1/4 cup
3. Oil 2-3 teaspoons or to taste
4. Mustard 1/4 teaspoon
5. Jeera / cumin seeds 1/2 teaspoon
6. Green chilies, chopped, 1-2 or to taste
7. Ginger, chopped, 1/2 teaspoon

How to make Ridge Gourd Curry?

1. Peel the ridge of the ridge gourd with a peeler.

Scrape the skin thinly with a knife.

If you wish to make chutney from the ridge and skin of the ridge gourd, peel the ridge and skin with a peeler instead of knife.

Cut the ridge gourd into small pieces.

3. Add mustard and jeera.

Fry till the jeera turns golden brown.

4. Add  green chilies, ginger, curry leaves and onion.

Fry till the onion becomes soft.

5. Add ridge gourd and sprouted moong.


Add a tablespoon of water and salt. Mix.

Cover and cook till the vegetable becomes just soft, while mixing intermittently.

Because the water content in the ridge gourd is sufficient to cook it, there is no need to add water. However, if the vegetable and moong has not cooked properly, add extra water.

6. Add coconut gratings, coriander leaves and lemon juice. 

Coconut gratings will spoil the curry after some time.

Thus, if you wish to keep the curry for a longer period, at room temperature, cook for a few more minutes, after adding the coconut.

1. Cut a small piece of the ridge gourd and taste it. If it is bitter discard the gourd.
2. If you find it difficult to cut a ridge gourd, discard it because the curry made from such a gourd will be difficult to chew.
