Ingredients:

1. Kovakkai / dondakaya / tindora / thondekayi / coccinia grandis / ivy gourd 1 cup
2. Oil 2-3 teaspoons
3. Mustard 1/2 teaspoon
4. Chana dal 1 teaspoon
5. Green chilies 2-3
6. Curry leaves 1 sprig
7. Onion 1
8. Turmeric 1/4 teaspoon
9. Coconut gratings1/2 tablespoon
10. Fresh coriander leaves, chopped
11. Salt to taste

How to make Kovakkai Curry?


1. Soak kovakkai / tindora / dondakaya / thondekayi in water for about 30 minutes.

Rub the kovakkai with your fingers to remove its leaves, which may be present on the surface of kovakkai.

Drain the water.
2. Remove the top and bottom ends.

Cut into half.

Cut each half into thin, long pieces.

3. Chop onion and chilies into thin pieces.

4. Heat oil in a utensil.

5. Add mustard when the oil becomes hot.

6. Add chana dal when the mustard starts to splutter.

Fry till the chana dal turns to golden brown.
7. Add curry leaves, chilies and onion.

Fry till the onion changes its color.
8. Add kovakkai and turmeric.

Fry for a minute.
9. Add about a quarter cup of water. Mix.

Cover the utensil.

Cook till the vegetables become soft.

10. Add salt and coconut.

Mix.

Cook till the kovakkai absorbs the salt.
