Servings: 2-3

Ingredients:

1. Oil 1 tablespoon
2. Mustard 1/4 teaspoon
3. Channa dal 1/2 teaspoon
4. Urad dal 1/2 teaspoon
5. Cumin seeds 1/4 teaspoon
6. Green chillies 4-5
7. Ginger 1/2 teaspoon (chopped)
8. Onions 2-3
9. Aloos / Potatoes 3-4
10. Roasted Gram dal powder 1 teaspoon
11. Turmeric 1/4 teaspoon
12. Fresh coriander leaves 1 teaspoon
13. Salt to taste

How to make Aloo Sabzi?


1. Cut the potatoes into quarter-sized pieces, if are using big potatoes.

Cook the potatoes with the skin until it is soft.

2. Remove the skin of the cooked potatoes.

3. Mash the potatoes into big chunks.

4. Heat oil in a pan.
5. Add mustard when the oil is hot.

6. Add channa dal, urad dal, and cumin seeds when the mustard starts to splutter.

Fry till the dals turn to golden brown.
7. Add curry leaves and chopped green chillies.

Fry for 1 minute.
8. Add the chopped onions and ginger.

Fry till the onions becomes tender.

9. Add the mashed potatoes, roasted gram dal powder, turmeric, salt and 1 cup of water.

Stir the mix.
10. Boil the sabji / sagu for 5 minutes.

TIP
If the sabji is too thick, add little more water.

If the sabji is watery, lightly mash the potatoes with the spatula.

11. Boil for few more minutes.

Add coriander leaves.
12. Aloo sabzi or aloo sagu is ready.

TIPS Aloo Sabzi Recipe
1. If you want to use less oil:

- In Step 4, use less oil.

- After onion is half-fried, add 1/4 cup of water and cook till onion is soft.
