How do you ensure you buy the right ridge gourds? They should be fresh, which will evident by the green color throughout the length of the gourd. Further, it should be firm end-to-end. That is it should not be soft, particularly at the ends.

Why is ridge gourd also called as luffa sponge gourd or vegetable sponge? The reason this vegetable has these names is because dried and processed ridge gourd is used as a bath sponge.

Such a sponge is said to improve blood circulation and provide relief for rheumatic and arthritic patients.2

Ridge gourd / luffa / peerkangai /  beerakaya /  turai / heerekayi pieces 1 cup
2. Oil 1 teaspoon
3. Garlic cloves 3-4

5. Coriander seeds 1-and-1/2 teaspoons
6. Urad dal 2 teaspoons
7. Roasted gram 2 teaspoons
8. Curry leaves 2 sprigs

How to make Ridge Gourd Chutney?

2. Wash the ridge gourd.







Cut into pieces.

4. Add ridge gourd, garlic, chilies and coriander leaves.






Fry till ridge gourd becomes soft.

NOTE: The skin of the ridge gourd will not become soft.

Keep aside to cool.

6. Add the fried ridge gourd mixture.

Add water and grind to a paste.

TIPS Ridge Gourd Chutney
1. If you have made sambar or curry from the ridge gourd, do not discard its skin peelings. Instead, use them to make the chutney. In this case, it is called ridge gourd skin chutney.
2. Add coconut or copra for extra taste.
