1. Poha / avalakki / aval / flattened rice 1/2 cup (thick variety)
2. Oil 1 to 1-and-1/2 tablespoons
3. Mustard 1/4 teaspoon
4. Groundnut 1/2 tablespoon
5. Channa dal 1/2 teaspoon
6. Onion, chopped, 1/4 cup
7. Curry leaves 1 sprig
8. Ginger, chopped, 1/4 teaspoon
9. Capsicum and carrot, chopped, 2 tablespoons each
10. Pototo, chopped, 2 tablespoons (soaked in water)
11. Peas (frozen), 2 tablespoons
12. Tomato, chopped, 1/4 cup
13. Sambar powder 1/2 teaspoon
14. Turmeric 1/8 teaspoon
15. Coconut gratings 2 tablespoons
16. Hing few pinches
17. Salt to taste
18. Coriander leaves, few sprigs
19. Water 1/4 cup
20. Water to rinse poha

How to make Poha Upma?

1. Pulse poha, in a blender, into a coarse mixture. You have to press and hold the Pulse button on the blender for about three seconds and release the button. Repeat the press-and-release task five to six times.
2. Add poha to a stariner.

Pour water over poha .

Press to remove water.

This step is mandatory to remove any dirt.
3. Heat oil in a utensil till the oil becomes hot.

Add mustard.

Add groundnut and chana when the mustard splutters.

Fry till chana becomes golden brown.
4. Add onion, ginger and curry leaves.

Fry till the onion become translucent.
5. Add carrot. Fry for a minute.

Add potato. Fry for a few seconds.

Add capsicum. Mix.

Add peas. Fry till the potato is almost cooked.
6. Add tomato. Mix.

Add turmeric and chili powder. Mix.

Add little salt.

Cook till tomato becomes soft.
7. Add hing.

Fry for a few seconds.
8. Add water and salt. Mix.

Some types of poha require less water to become soft. If the washed poha is already soft, do not add water to the tempering mixture.

Cover. Cook till the water boils.

Break poha lump. Add to the tempering mixture.

Mix thoroughly.

Cover. Cook till the water absorbs (1-2 minutes).
9. Add coconut and chopped coriander.

TIPS Poha Upma
1. If you do not have sambar powder, add about 1/4 teaspoon each of chili and coriander powders.
2. Add lemon juice to make the upma more tangy.
3. Green beans is another vegetable that makes aval upma more nutritious. Finely chop the green beans and add them in Step 5, along with carrot.
